Pompano
Trachinotus carolinus
The Florida pompano is a species of marine fish in the Trachinotus (pompano) genus of the family Carangidae. It has a compressed body and short snout, coloration varies from blue-greenish silver on the dorsal areas and silver to yellow on the body and fins.
Florida pompano is a prized food fish with rich but mild, white, oily flesh. A classic preparation is pompano en papillote, the fish baked in parchment with a white wine, shrimp, and crabmeat sauce.
Florida pompano ranges from Massachusetts to Brazil and is most common around Florida. It favors warm water over surf flats, migrates north in summer and south in winter, and stays year-round near the Virgin Islands.
