Sciaenops ocellatus (Red Drum) / Sebastes marinus (Ocean Perch)
The red drum, also known as redfish, channel bass, puppy drum, spottail bass, or simply red, is a game fish found in the Atlantic Ocean from Massachusetts to Florida and in the Gulf of Mexico from Florida to northern Mexico. It is the only species in the genus Sciaenops.
Redfish (red drum) has mild, firm flesh that isn't oily, and it became famous through blackened redfish, the Cajun dish of fish coated in spices and seared hard. Smaller fish are best, since big ones turn tough.
The red drum, Sciaenops ocellatus, lives along the Atlantic coast from Massachusetts to Florida and through the Gulf of Mexico to northern Mexico. Young fish use grassy bays and estuaries, while adults favor jetties and structure. ('Redfish' also refers to Atlantic ocean perch, Sebastes, a different fish.)
