The rainbow runner has firm, good-quality flesh that's eaten fresh, salted, or frozen, and it's well suited to sashimi. It fetches modest prices because it isn't widely known, and a lot of it comes in as tuna-fishery bycatch.
The rainbow runner, Elagatis bipinnulata, is a jack (family Carangidae) with a circumtropical range across tropical and subtropical seas. It's a pelagic fish of the upper water column, found both nearshore and offshore.
