Salmo salar (Atlantic) / Oncorhynchus species (Pacific)
The Atlantic salmon is a species of ray-finned fish in the family Salmonidae. It is the third largest of the Salmonidae, behind Siberian taimen and Pacific Chinook salmon, growing up to 1 m (3.3 ft) in length.
Salmon is one of the most popular eating fish, rich and oily, and it's grilled, roasted, pan-seared, cured into lox or gravlax, smoked, or eaten raw as sushi and sashimi. It holds up to almost any cooking method.
'Salmon' covers the Atlantic salmon (Salmo salar) and several Pacific species (Oncorhynchus), including king (chinook), coho, sockeye, and pink. They're anadromous, hatching in freshwater rivers, maturing in the ocean, and returning upstream to spawn. Much of the salmon sold today is farmed.
