Description
Sauger is good eating, with sweet, mild, white flesh much like its close relative the walleye, and it's usually pan-fried or baked. Anglers in river systems prize it.
The sauger, Sander canadensis, is a North American freshwater fish that favors large rivers with deep pools, while its relative the walleye leans toward lakes and reservoirs. The two sometimes interbreed to produce the saugeye.
Also known as
- Sand pike
- Saugeye (hybrid)

Warnings & Kosher Issues
- Kosher. Sauger have fins and ctenoid scales.
- Looks much like a walleye. Spotted dorsal fins and the lack of a white patch on the tail help tell sauger apart.
