Description

Snapper blues are young bluefish, and the small ones are usually fried since they're less oily than adults. Bluefish goes rancid fast, so plan to cook it the day you buy it. Pickling in vinegar is another traditional approach.

This is the juvenile bluefish, Pomatomus saltatrix, a pelagic fish of temperate and subtropical waters worldwide except the northern Pacific. Young fish school in large bays and estuaries along the U.S. East Coast, where they're a favorite of pier and surf anglers.
