Description
Spanish mackerel is an oily, full-flavored fish that's usually grilled, broiled, smoked, or pan-fried, and it's best eaten fresh. The rich flesh also takes well to a quick cure.
These are fast pelagic fish in the mackerel family (Scombridae), found in warm coastal waters of the Atlantic, Pacific, and Indian Oceans. Anglers and commercial boats catch them mostly with hooks and lines, and you'll find Atlantic Spanish mackerel and king mackerel common in U.S. seafood markets.
