Yellowtail amberjack is served mostly as sashimi in Japanese restaurants, where it is known as hiramasa. It is also grilled or dried.

This jack lives in temperate and subtropical waters of the Southern Hemisphere and the northern Pacific, favoring rocky reefs and coastal water down to about 50 meters. It is widely farmed, with major operations in South Australia, Western Australia, New Zealand, and Germany.
