Description
Anchovies are eaten cured, gutted and salted in brine then packed in oil or salt, or pickled in vinegar as Spanish boquerones. They flavor Worcestershire sauce and Caesar dressing, and fresh ones (alici) are much milder. In Southeast Asia they are deep-fried as a snack.
Anchovies live in the Atlantic, Indian, and Pacific Oceans, plus the Black and Mediterranean Seas. Most species are marine, though several enter brackish water and some South American ones live in fresh water. Large schools gather in shallow, muddy estuaries and bays.
