Description
The Pacific geoduck is a species of very large saltwater clam in the family Hiatellidae. The common name is derived from the Lushootseed name, gʷidəq.
Geoduck is prized for its crisp, sweet siphon, most often served raw as sashimi or in ceviche, and also stir-fried or used in chowder. It's especially popular in Chinese and Japanese cooking.
The geoduck is a very large burrowing clam native to the eastern North Pacific, from Alaska down to Baja California, living deep in sand and mud flats in bays and nearshore waters. The Pacific Northwest, especially Washington State, supports the main commercial harvest under strict regulation.
