Description
Cisco is eaten fresh, smoked, or frozen and can be steamed, fried, broiled, boiled, or baked. Salted or smoked cisco once provisioned much of the surrounding territory, and its roe is now a notable caviar product in Scandinavian cooking.
The cisco is a pelagic freshwater whitefish that lives in the midwater of cold lakes across North America, and in the northern and western parts of its range it also occurs in large rivers. It's found throughout the Great Lakes region.
