Description

Rabalo is the Spanish name for snook, a prized food fish with mild white flesh that's filleted and grilled, baked, or fried. As with snook, remove the skin before cooking to avoid a soapy taste.

'Rabalo' (more often spelled robalo) refers to snook, especially the common snook (Centropomus undecimalis), found in the tropical western Atlantic from the Carolinas to Brazil, including the Gulf of Mexico and Caribbean. It uses estuaries and shallow coastal water and often enters freshwater.
