Anoplopoma fimbria
The ilish, also known as the ilishi, hilsa, pulasa, hilsa herring or hilsa shad, is a species of fish related to the herring, in the family Clupeidae. It is a very popular and sought-after food in the Bengal region and area, and is the national fish of Bangladesh and state fish of the Indian state of West Bengal.
Sablefish is rich, buttery, and high in oil, which is why it's a favorite for smoking, grilling, broiling, and miso-marinated dishes. Chef Nobu Matsuhisa's miso black cod made it famous, and it's also used for sushi.
Sablefish, Anoplopoma fimbria, is a deep-water fish of the North Pacific, living on muddy bottoms at depths of about 300 to 2,700 meters. The commercial fishery centers on Alaska, British Columbia, and the U.S. West Coast.
