Description

Sauger is good eating, with sweet, mild, white flesh much like its close relative the walleye, and it's usually pan-fried or baked. Anglers in river systems prize it.

The sauger, Sander canadensis, is a North American freshwater fish that favors large rivers with deep pools, while its relative the walleye leans toward lakes and reservoirs. The two sometimes interbreed to produce the saugeye.
