Description
Scorpionfish have firm, sweet white flesh that's excellent in soups and stews and is a backbone of dishes like bouillabaisse. The spines are trimmed off before cooking.
Scorpionfishes (family Scorpaenidae) live in tropical and temperate seas, especially the Indo-Pacific, usually around reefs but also in bays, estuaries, and lagoons. Many rockfishes and thornyheads belong to this family.
