Pacific sierra is a popular eating fish in Mexico, where it's a classic base for ceviche and is also grilled or pan-fried. It's a Spanish mackerel, so the flesh is rich and full-flavored.

The Pacific sierra, Scomberomorus sierra, is a Spanish mackerel of the eastern Pacific, ranging from southern California to Chile. Like other mackerel, it's a fast schooling fish caught along the coast.
